Apples from the 2018 harvest, grown organically in Hood River and our estate orchard . Matured over 8 months partially on French oak and lightly sweetened with honey. Unfiltered, racked for clarity.

Fruit from the 2017 harvest, grown organically on the Olympic Peninsula. Fermented with ambient & champagne yeast, matured for 9 months in stainless.
