Process | Pressed in the winter of 2019, fermented slowly exclusively with native yeast then left to mature in stainless for 8 months finished with a touch of residual sweetness and pasteurized.
Alpenfire's Ashmead’s Kernel, this single varietal Ashmead’s Kernel was pressed in the winter of 2019, the apples were grown organically in Hood River Oregon at Heirloom Orchards. Fermented to a crisp refreshing dryness with a nice level of acidity. The lack of commercial yeast added a bit of complexity to the fermentation and increased the complexity of the final cider adding some woody aromas. Pairs well with cured meats and strong flavored cheese’s and spreads.
